Boysenberry Cobbler

Batter Ingredients:

1 cup flour
1 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
2 Tbsp soft butter
1 egg slightly beaten
3 Tbsp of milk

Berry Mix Ingredients:

1 1/2 Tbsp cornstarch
1/3 cup sugar
4 cups boysenberries
1/8 cup water
1 Tbsp butter
1 Tbsp lemon juice


Preparation
Preheat oven to 350 degrees.

In a medium saucepan combine the cornstarch, sugar, and water. Add the berries of choice (you can use other berries such as blueberries, marion, ect) and cook on medium heat until mixture is thickened for roughly 15 minutes. Add the butter and lemon juice to the mix, then stir. Pour contents into an medium sized baking dish.

Mix in all of the batter ingredients and mix with a spoon until the batter is smooth texture.
Spread evenly the batter over top of the berry mix.

Bake 25-30 minutes at 350°F. Cool then serve.
