Spiced Blueberry Muffins
Ingredients
2 cups all purpose flour
3/4 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
1/8 teaspoon cloves
1 1/2 cups fresh frozen blueberries
1/3 cup softened butter
1 (8 ounce) fat free cream cheese
1/2 cup 2% reduced fat milk
2 large eggs
1 teaspoon vanilla extract
1 1/2 tablespoon sugar
Preparation
Preheat oven to 425 degrees
Combine and mix 2 cups of flour, 3/4 cup sugar, baking powder, sald, ground cinnamon, nutmeg, and cloves in a large mixing bowl.
Combine blueberries and 1 tablespoon of flour in small bowl. Evenly coat blueberries.
Combine cream cheese and butter in a medium sized bowl then mix with mixer at high speed until well blended. Add milk, eggs, and vanilla to mixture then mix. Add the butter mix to the flour mix and gently fold. Then gently fold in blueberry mix.
Spoon mix into muffin cups coated with Pam cooking spray. Evenly sprinkle 1/2 tablespoons of sugar over tops of muffins. Bake for 15 mins at the specified temperature above or until golden brown. Cool then serve.
