Lemon Blueberry Muffins
Ingredients
1 1/2 cups all purpose flour
1/2 cup cornmeal
1/2 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup blueberries
1 cup low fat buttermilk
3 tablespoons melted butter or margarine
1 tablespoon lemon rind
1 large egg
1 tablespoon sugar
Preparation
Preheat oven to 400 degrees.
Combine flour, cornmeal, sugar, baking powder, baking soda, and salt in a medium size bowl. After thoroughly mixed, mix in blueberries.
Combine buttermilk, butter, rind, and egg then stir with whisk. After mixed, add to flour mix and stir until moist.
Transfer batter to muffin cups coated with Pam cooking spray. Lightly and evenly coat tops of uncooked muffins with 1 tablespoon sugar. Bake at the above specified temperature for 20 minutes or until golden brown. Cool then serve.
