Blueberry Lemon Muffins
Ingredients
2 cups all purpose flour
1/2 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/8 teaspoon nutmeg
1/4 cup butter
1 1/4 cups low fat buttermilk
1 large egg
1 tablespoon grated lemon rind
1 cup blueberries
1 table spoon fresh lemon juice
1/2 cup powdered sugar
Preparation
Preheat oven to 450 degrees.
Combine flour, sugar, baking powder, baking soda salt and nutmeg in a medium bowl. Mix in butter- mix well.
Combine and mix buttermilk, egg, and lemon rind together. After thoroughly mixed, mix in blueberries.
Place muffin batter into muffin cups coated with Pam cooking spray. Bake muffins for 20 mins at the above specified temperature or until golden brown. Cool muffins.
Mix lemon juice and powdered sugar in a small bow then evenly spoon over the tops of the cooled muffins.
